Baileys Mocha Frappé Recipe
- 3 cups ice cubes (use filtered water!)
- 1 tablespoon instant coffee or espresso
- 80ml (1/3 cup) light coconut milk
- 80ml (1/3 cup) Baileys (Irish Cream liqueur) or Irish Cream Syrup
- liquid chocolate topping
- 1 small block of dark chocolate
Start by filling the pitcher with 2 cups of ice cubes. Then add Baileys or syrup, instant coffee or espresso and the coconut milk. Blend until the mixture is almost smooth. Swirl chocolate topping around the rim of the 2 serving glasses and pour the frappe over some fresh ice subes. Grate some dark chocolate over the top to garnish.

Rainbow Vegetable Salad Recipe
- 20 chopped Brussels sprouts
- ½ cup cold pressed extra virgin olive oil
- 1 teaspoon sea salt
- 4 cups red cabbage
- 4 cups white cabbage
- 4 carrots
- 8 long celery sticks (without leaves)
- 1 medium sweet white onion
- 1 bunch of flat-leaf parsley
- ½ medium red capsicum
- ½ medium yellow capsicum
- ½ medium orange capsicum
- 8 cloves of garlic
- 1 small bunch of asparagus
- 1 cup chopped raw almonds (or pine nuts or hazelnuts)
Preheat your oven to 180 degrees. Toss the Brussels sprouts in the olive oil and sea salt and roast for about 30 minutes until they start to slightly darken on the edges and caramelise.
While the sprouts are cooking finely chop or dice all other vegetables. You can chop all of the veggies in your Ambassador blender, or use a food processor.
Toss all vegetables in a large salad bowl.
- 2/3 cup dark (toasted) sesame oil
- 2/3 cup cold pressed extra virgin olive oil
- 1 tablespoon hulled tahini
- 3 teaspoon of sesame seeds
- 6 tablespoons of freshly squeezed lemon juice (about 2 average-sized lemons)
- 8 cloves of garlic, crushed
- 1 teaspoon of sea salt
- 1/4 teaspoon dried red chilli pepper flakes
Place all of the ingredients in your Ambassador blender until well combined.
Toss the dressing through the salad and serve topped with asparagus spears, sesame seeds and raw nuts sprinkled over the top.
